It's a dish that feels elevated enough for a special evening in camp but is simple enough to prepare after a day spent hiking, exploring, or relaxing outdoors. It's both nourishing and delicious. It's versatile, accommodating different diets and serves both small or large groups.


The combination of coconut milk, green curry, vegetables, and shrimp creates a warm, satisfying meal that comes together easily using the PinDrop's outdoor kitchen setup. Ingredients - PinDrop Approved Cuisine

For 4 servings, you'll need:

  • 2 cups white rice (jasmine rice preferred)

  • 1 medium onion, diced

  • 2 red bell peppers, sliced

  • 3 cloves garlic, minced

  • 1 can Thai coconut milk

  • 2–3 tablespoons Thai green curry paste (or more if desired)

  • 2 fresh limes

  • 1 pound frozen shrimp, thawed

  • 1 block firm tofu (optional)

  • Salt and pepper to taste

  • Cooking oil


Preparing the Rice

Start by preparing the rice in a pot with a lid. Follow the cooking instructions for your preferred rice and set it aside once cooked.

Building the Curry Step By Step

  • Heat a small amount of oil in the large cast-iron pan.

  • Add the diced onion and cook until softened, about 4–5 minutes.

  • Stir in the garlic and cook for another minute before adding the sliced red pepper.

  • Once the vegetables begin to

    soften, add the green curry paste and stir to coat the vegetables evenly. Allow the curry paste to cook for a minute or two to develop its flavor.

  • Pour in the coconut milk and stir until fully combined. Bring the mixture to a gentle simmer.

  • Add the shelled and washed shrimp and continue cooking until the shrimp are pink and fully cooked through, usually about 3–5 minutes.

  • Add the juice of 1-2 limes directly in the simmering pan

  • Season with salt and pepper to taste.

Optional: Pan-Seared Tofu

For those looking to add extra protein or create a surf-and-turf variation, tofu pairs exceptionally well with the curry.


Using a separate frying pan, heat a small amount of oil and fry the cubes or slices of firm tofu until golden brown on all sides. Salt to taste. Add the tofu as a topping or stir into the curry just before serving.


Serving it Up

Spoon the rice into bowls and top with the green curry, shrimp, and vegetables. The rich coconut broth and mild heat of the curry make for a comforting meal, especially as temperatures cool in the evening. Pair your curry dish with a hydration of your choice, a white wine, or an iced herbal tea.
